Liquidised beans sometimes used as a meat substitute.

Black Bean Sauce
Made with black beans and garlic. Sometimes chilli is also added.
 

Calamari

Squid or cuttlefish. Very popular in Italy either deep fried or lightly boiled and served in a seafood salad. The black ink from this seafood is used to flavour and colour both pasta and risotto.

 
Calzone
(Italian) Folded Pizza originating in Naples, calzone is a stuffed pizza that resembles a large turnover. It is usually made as an individual serving. The fillings can be various meats, vegetables or cheese; mozzarella is the cheese used most frequently. Calzones can be deep-fried or brushed with olive oil and baked.

Different to the traditional sweet & sour crispy ball, the Cantonese style sweet & sour is much more meaty & done in very thin batter with green pepper, onion & pineapple in the sauce.

Roast Pork.
 
Chop Suey
A meal containing beansprouts as the main ingredient.
 
Chow Mein
Fried Noodles. Usually served with a choice of meat and/or vegetables.
 
Crispy Aromatic Duck
Duck with cucumber, spring onions and Hoi Sin sauce. Served with light pancakes.
 
CURRY
Usually made as a thick stew containing vegetables, a choice of meat and a sauce made with many spices. A dry curry has less sauce than a normal curry.
 
Dao Fu
Bean Curd.
 

Dim Sum

A selection of small dishes served for snacks and lunch in China. These dishes include a wide selection of fried and steamed dumplings, as well as, various other sweet and savoury items. The term for this Chinese style of eating translates as "Heart's Delight." Originally dim sum referred to the Cantonese practice of serving small dishes in the teahouses. The method involved food being brought to the table on a cart or tray. The customer would then select the items they desire.

 

Doner

Döner kebab (as döner kebap in Turkish and often simply döner or donair), which literally means "rotating roast meat" is originally a Turkish dish made with mutton.

 
Dumplings
Either buns made from sweet dough and stuffed with meat or sweet fillings, OR, Ravioli style boiled dumplings.
 
Fu Young
A cross between scrambled egg and omelette.
 
Hoi Sin Sauce
A rich, barbeque type sauce.
 

Jalapenos

The jalapeńo is a small to medium-sized chilli that is prized for the hot, burning sensation that it produces in the mouth when consumed. It is a cultivar of the species Capsicum annuum.

Made with chillies and spring onions. A hot, spicy dish.

Pasta like spaghetti only thinner.
 
Pancake Rolls
Another name for spring rolls.

Singapore Fried Noodles
Very thin spicy noodles, often mixed with a choice of meat and/or vegetables.
 
Spring Roll
A batter is made from a kind of rice paper. It is then filled with meat or vegetables before being rolled up and deep fried.
 
Szechuan Sauce
Hot and spicy dishes usually including chilli.
 
Tofu
A type of bean curd or Dao Fu.
 
VERMICELLI

(Italian) A very fine round noodle which means "small worms". These are thinner than spaghetti and thicker than capellini.

 
WATER CHESTNUTS
 
 
Won Ton

A small Chinese dumpling made from egg-noodle dough dusted with cornstarch and filled with a mixture of seafood, meat or vegetables. Wontons may be boiled, deep-fried or steamed, and eaten in soups or as appetizers.

 
YONG CHOW
 
 
YUK SUNG

A mixture of finely chopped meat fried with crunchy vegetables, mixed with crispy Chinese vermicelli, served on boats of crispy lettuce.
